Zucchini Sanjacobos
Ingredients
- 1 large zucchini
- Cooked ham (sliced)
- Emmental cheese (sliced)
- I beaten egg
- Bread crumbs
- extra virgin olive oil
- Salt
How to prepare Zucchini Sanjacobos
Cut the zucchini into thin slices lengthwise, leaving each slice on baking paper or a plate and season with salt and pepper. On the slice of zucchini we put a slice of cooked ham and another of cheese. We finish the Sanjacobo with another slice of courgette , we cut each sanjacobo in half.
Dip the zucchini in beaten egg and then in breadcrumbs, coating the entire surface and sides well. Fry in plenty of hot oil. Once fried, let the zucchini Sanjacobos rest on kitchen paper so that it absorbs the excess fat.
