In summer, children’s birthdays  are usually outdoors, and everything becomes more summery: the food, the games, and also the cake! That is why this  beach cake that we will prepare today will come in handy for any children’s party  that you have this summer: it can be a  very easy birthday cake, or also a  very special snack. We will prepare a  juicy and tasty banana cake  , and we will decorate it in a simple way, you will see that it is not necessary to have a hand with confectionery to prepare this  special beach cake  .

Our banana cake is very juicy, so we will not fill it, but if you want a more dessert-like cake, you can soak the cake with  syrup and fill it with the same cream that we will use to cover it, or a different one.

Easy summer birthday cake for kids

Ingredients

For a 22 cm diameter cake

  • 200 g of margarine or butter
  • 200g sugar
  • 3 eggs
  • 300 g of all-purpose flour
  • 16 g (1 sachet) chemical yeast (Royal type)
  • 1 Teaspoon vanilla extract
  • 2 ripe bananas

to decorate

  • whipped cream or lightly dyed meringue cream
  • about 10 sweet cookies
  • ring shaped jelly beans
  • teddy bear cookies (can be purchased ready-made or homemade)
  • 250 g of waffles
  • jelly beans in the form of strips or square clouds
  • cocktail umbrellas

How to make this children’s birthday cake

To prepare the sponge cake, beat the margarine at room temperature with the sugar until a white cream is obtained, add the eggs and beat to mix, add the bananas, well mashed with a fork, and the vanilla essence and mix. In another container mix the flour with the yeast, add twice to the previous mixture, mix well, place in a 22 cm round mold. oiled and take to the oven preheated to 180 degrees for 30-35 minutes, we will know that the cake is ready when we prick the center with a toothpick and it comes out clean.

Let cool for a few minutes in the pan, then unmold and let cool completely on a wire rack.

Meanwhile we prepare the things to decorate the cake: we mount the cream or prepare the meringue cream (I used whipped vegetable cream), dye it with blue food colouring, and mix well. We also crush the cookies with the grinder or the kitchen robot, until we have a powder that looks like sand.

Place the cake on the tray that we will use to serve. If we so wish, we pierce and fill. We cover the entire cake with the light blue cream, it does not need to be very smooth because what we are doing is the water, which can be somewhat ‟movy”. With the crushed cookies we cover a part of the cake, which will be the beach with sand. We cover the entire edge by sticking waffles directly on the cream, you may need to cut them a little, I have done it irregularly so that they are not all the same and the edge has some movement.

Now we only have to put our bears to sunbathe or take a dip. Cut the clouds or strips to the size necessary to lay the bears on top, and put the bear cookies lying on top sunbathing. We punctured the umbrellas, one for each bear. To make the bears that are in the water, with a knife we ​​cut the lower part, and stick them in the cake inside a ring-shaped jelly bean. If the bear does not fit you, you can cut the gummy to open it a little, and fill in the space with another piece of gummy.
